This is one of those freeze ahead crock pot meals. It was pretty good but keep an eye on it as the time that it is getting ready to finish, I am not sure if it was because I totally defrosted it, but it was done in about 5 hours on low when totally defrosted.
2-3 chicken breasts, cut in bite-sized chunks
1/2 Tablespoon kosher salt
6 oz frozen orange juice concentrate, thawed
3 Tablespoons brown sugar
1 teaspoon balsamic vinegar
3 Tablespoons ketchup
Put chicken pieces in a gallon freezer bag. Mix the rest of the ingredients in
a small bowl. Mix until well combined. Pour sauce into bag over the chicken.
Seal the bag.
When ready to eat, cover and cook in a slow cooker on low for 6-8 hours. Serve
with white or brown rice.
